I was at my regular Market District Supermarket earlier just to pick up a few things. However, noticed some Lamb Neck Bones and Lamb Shanks for dirty cheap prices passing thru the meat section. like around $2 each for the Lamb Shank & Neck Bones pack pieces. The meat cuts where it’s mostly the bones with some meat but most people don’t buy, so priced at bargain prices. Someone like me comes along with an idea in mind and buy them all up for stewing. I had picked up six packs of the Lamb pieces, but at this time decided to cook two of the packs of lamb pieces. Lamb Neck Bones & Shank.
So while I was up late into the night decided to cook the pieces and make a stew. I didn’t have a plan or recipe as usual… just cook. Quickly seasoned up the lamb pieces with a various array of spices, roasted the pieces in the oven at high temp for about an hour. Chopped up some aromatics and veggies, added the lamb pieces to the dutch pot and brought up to a boil. Then placed the stew into the oven to slow cook away into the early hours of the morning while I worked on things. It was 3 AM when the stew finished cooking but just left it in the oven to keep stewing away. Finally went to bed for a very short sleeping session. The stew was still really warm in the oven when I got up by 6 AM. Took some to work for lunch and had for dinner tonight. This stew just reminded me of home in the Caribbean and took me back to childhood days. It was damn delicious with the meat just falling off the Lamb Shank. Maybe I come up with an actual recipe when I can get around to it.
