
Eggplant Croquettes
Eggplant is a vegetable that I do enjoy eating allot and did so when I was a kid growing up in the islands. Sadly I don’t usually get to eat it as often as I’d like. I also didn’t have much recipes in particular for creatively using the vegetable. One of the first few and longest reading food blog I’ve ever read is one is a by Nita over at Tastesspicy. It’s a great food blog and one I do enjoy reading. Some time back I remember asking Nita on her blog if she can post some more Eggplant dishes since she grew some in her garden and love to make dishes with them. So recently she posted a recipe for some Eggplant Fritters. I think she made them just for me. Well, I had to do the proper thing and make some myself from her recipe.

Eggplant Croquettes
So I did! And you know what? I really love eating these bite size of deliciousness!
Roasting the Eggplant over the stove can be a little bit tricky and messy. It was over my gas stove but I did get it all cleaned up. To the recipe, I added a few more garlic pieces just because I love garlic and the taste of roasted garlic to be had. Also added some fresh Thyme as well because I just love the herb and the flavor it adds to things. Used Panko breadcrumbs as well for the breadcrumbs and think that gave it a really nice look too. I had a little hard time getting these into a cylindrical shape so I settled for a rounder shape using a small ice cream scoop. They looked like Croquettes to me at that point, so that’s what I call them.
These are also definitely good for snacks, a little party or company picnic. I can just eat them anytime. But I’ll absolutely be making these again and likely sometime very soon as I have a few Eggplants I recently picked up at the Farmers Market. These are definitely worth making in your own kitchen.
