Hello reader, how was your weekend? My weekend was busy, most of it Food Blog related somehow. Didn’t do any long cooking, just quick things to make and eat. Summer is here and mangos are plenty at the grocery store. I always like to pick up a few mangos and keep some around in my kitchen to use or snack on. They remind me that I have tropical blood and taste for tropical fruits. But two of the things I love are shrimps and mangos.
Didn’t feel like messing up my kitchen cooking anything complicated after spending allot of time cleaning it up. So for Sunday Dinner since I also didn’t have a plan, I figured maybe something easy that was fresh and light. Just use up some the mangos while at it if possible.
A quick visit to the grocery store to grab some pre-cooked shrimp, orange, some limes and a few other things. Anything else I needed, already had at home. Thinking about what I would make, I just sliced & diced some the veggies, herbs already had on hand including a mango. Because I also like mango with anything. Ended up quickly making a Shrimp Mango Salsa. Fresh & Delicious! You can do allot with mangos.
